Vegan Carrot-Oat Patties 

1 large onion finely minced
1 cup quick cooking oats
1 cup fresh  bread crumbs – whole wheat is best
1/4 cup whole wheat flour
1 tablespoon tahini
1 tsp. garlic salt
1 tsp. pepper
1 cup grated carrots

1 cup apple juice
1 apple cored and chopped
3 cups chopped cabbage
3 shallots, minced
1 clove garlic, minced
1/2 teaspoon salt
1 cup soy milk
2 tablespoons minced parsley

Cook first six ingredients until the cabbage is very soft and the liquid has almost disappered.  Stir in soy milk.  Serve very hot with croutons.

2 cups cooked brown rice
1/2 cup chunky peanut butter
1/2 cup water
1/2 cup raisins

4 cloves garlic finely minced
2 tablespoons peanut butter
6 little green onions and their tails finely chopped

Spicy Cranberry Salsa

1 12 ounce bag fresh cranberries
4 tablespoons fresh chopped cilantro
1/3 cup fresh lime juice 1
/2 teaspoon salt
2 jalapeno peppers – seeded and minced
