Vegan Cream of Cabbage Soup

1 cup apple juice
1 apple cored and chopped
3 cups chopped cabbage
3 shallots, minced
1 clove garlic, minced
1/2 teaspoon salt
1 cup soy milk
2 tablespoons minced parsley
Cook first six ingredients until the cabbage is very soft and the liquid has almost disappered. Stir in soy milk. Serve very hot with croutons.
